LE MARS, Iowa, April 24, 2006 (PRIMEZONE) -- A Cinco de Mayo celebration isn't complete without a bowl of crunchy tortilla chips and tasty guacamole. The deliciously creamy dip is a standard at every fiesta, so this year, give the guacamole a twist. Guests will snack in amazement when they find out this dip is made with Blue Bunny(R) ice cream! Trust us, it is muy bueno!
Vanilla Bean Guacamole

4 ounces Blue Bunny Natural Vanilla Bean Ice Cream
2 avocados, peeled and seeded
1 teaspoon cilantro, finely chopped
1/4 cup diced tomato
Juice from one lime
Pinch of salt and pepper to taste
For the guacamole:
This recipe can either be made in a food processor or in a bowl by hand. Start by scooping the Natural Vanilla Bean Ice Cream and putting off to the side to soften up for 2-4 minutes. The ice cream should be soft but not melted. Add the avocados, ice cream and lime into the blender, saving a few whole pieces of avocado for garnish. Squeeze the juice from the limes directly into the blender. Add the softened ice cream and diced cilantro. Mix on low speed or by hand. Place the mixture into a serving bowl. Place the diced tomatoes and pieces of whole avocado on top. Sprinkle a pinch of salt over the tomatoes. Serve immediately.
TIP: Be sure that you purchase soft, ripened avocados for this recipe.
