Wine-Tamarind Glazed Cornish Hens With Tropical Salad Declared Winner in First Blaze a Better Barbecue Recipe Contest


MODESTO, CA--(Marketwire - December 9, 2010) - Redwood Creek wines is proud to announce the Grand Prize Winner in its first ever Blaze A Better Barbecue recipe contest. Loanne Chiu of Fort Worth, TX has been named the ultimate grillmaster with her Wine-Tamarind Glazed Cornish Hens with Tropical Salad recipe.

The online recipe contest, which accepted submissions during the summer, challenged consumers to create an original grilling entrée recipe that included one of Redwood Creek's eight food-friendly wines as an ingredient and a wine pairing recommendation. As the Grand Prize Winner, Chiu will receive a trip for two to Colorado Springs, CO to attend Steven Raichlen's Barbecue University® in 2011. Redwood Creek will also make a $2,500 donation in her name to Streams & Valleys, Inc., a nonprofit organization that coordinates recreation enhancements and beautification efforts to benefit the Trinity River and its tributaries in Fort Worth, TX. Additionally, Chiu and seven other finalists will each receive a $500 prize.

Chiu's winning recipe features Redwood Creek's Sauvignon Blanc as a key ingredient in the glaze that gives the recipe its name. Chiu was inspired to create the dish after having the meal of a lifetime on her 40th wedding anniversary. After enjoying deep fried quail, Chiu wondered what the recipe would taste like if she reinterpreted the dish on the grill and with the more widely available Cornish hen.

"I was very impressed by Loanne's recipe," said Steven Raichlen, barbecue authority and host of Primal Grill® on Public Television, who judged the contest. "The innovative use of Sauvignon Blanc in the glaze helps to bring out the natural flavors of the Cornish hen. Mouthwatering and simple, and easy to make on the grill."

Assisting Raichlen with the recipe-judging duties was a panel of wine, culinary and outdoor experts, including Mike and Chris Peters of Kansas City Barbecue Society and Redwood Creek winemaker Sean Hails.

In addition to judging the contest, Raichlen shared some of his signature dishes on Redwood Creek's website to help spark each campicurean's imagination. Raichlen's recipes included Grilled Clams with Sauvignon Blanc, Brats in a Chardonnay "Hot Tub" and Beef Ribs with Pinot Noir Barbecue Sauce.
