Chef Includes Healthy Options on New Catering Menus


ST. LOUIS, MO--(Marketwire - Jun 6, 2011) - The Renaissance St. Louis Airport Hotel recently added wedding enhancements to their new catering menu for the hotel's upscale catering operation. In addition, Chef Chris Stroup added to the new menu several healthy dishes.

Brides who book their St. Louis wedding receptions at the Renaissance St. Louis Airport Hotel can choose from three ballrooms, including the Renaissance Ballroom with brilliant views from the top floor of the hotel. In addition, with the new catering menu, they now have several wedding enhancements from which to choose. These include, signature cocktails where the bride and groom can name the beverage and help create the recipe, added action stations such as mashed potato bars and freshly seared tuna, Intermezzo added as an option or chocolate truffles to painted plates with cake cutting service.

Chef Stroup, who serves as the St. Louis luxury hotel's Executive Chef of their restaurant T-Bone Trattoria and the hotel's upscale catering operation, has created healthy dishes for the new catering menu. Brides and meeting planners who want healthier choices now have three dishes from which to choose, which include low carbohydrate, low cholesterol and low fat options. Chef Stroup's low carbohydrate dish is spice rubbed strip steak with balsamic grilled onions and sautéed wild mushrooms. His low cholesterol dish is grilled branzino sea bass with tomato couscous and fennel salad and the low fat dish is roasted turkey breast, rosemary pan jus, organic wild rice and seasonable vegetables.
