Creating the restaurant's name from two industries that were first developed in and around Charleston, the Brick Salt Bar + Kitchen recognizes the early West Virginia Salt Mines, the beginnings of the state's chemical industry and the first production of salt by Native Americans. Before the settlement of Bulltown, the Delaware Indians were making use of the salt brines as early as 1770 along the Little Kanawha River. Soon after the settlers began entering the area, salt became a prime commodity sought after by other areas of the nation.

Experimenting with the laying of brick in the streets of Charleston to rid the city of spring's annual quagmire of mud, Mordecai Levi began improving the hard packed dirt streets of the city in 1870 and developed the first patent on a Brick Paver system. Still years away from the automobile age, Levi paved Charleston's Summer Street the first year and with financing from a partner managed to pave an entire downtown block three years later. Within a short span of 25 years, the innovative experiment in Charleston had become the norm in cities throughout the United States.
