Mark Henry Named New Executive Chef at West Palm Beach Marriott

Marriott Welcomes the Celebrated Chef to Head Its Culinary Offerings at the Iconic Hotel in the Heart of West Palm Beach


WEST PALM BEACH, FL--(Marketwired - Feb 6, 2015) - The West Palm Beach Marriott is thrilled to announce the appointment of their new executive chef, Mark Henry, who will oversee the hotel's signature American restaurant, Bistro Ten Zero One, along with its in-house banquet and catering services. Henry comes to West Palm Beach from Skamania Lodge, located just 45 miles east of Portland, Oregon, and before that the highly regarded Eden Roc Miami Beach.

Chef Mark's passion for the restaurant industry began over 30 years ago, when he was washing dishes on the Jersey Shore. During that time, his passion for culinary was ignited and he enrolled in the Culinary Institute of America in Hyde Park. Following graduation, he continued to hone his skills at four and five-star restaurants across the country including The Plaza Hotel in New York City, Marriott's Camelback Inn in Scottsdale, Arizona, the Marriott Downtown Waterfront in Portland, Oregon, Harbor Beach Marriott Resort & Spa in Fort Lauderdale with Chef Dean Max and Eden Roc Miami Beach.

Mark Henry has won numerous accolades throughout his career, including DiRoNA (Distinguished Restaurants of North America) and Zagat awards. He has participated in the Return of the Great North American Chefs event at the James Beard House and he is a member of the American Culinary Federation (ACF). Because of his commitment to using sustainable products, he has become green certified.

Chef Mark brings his lifelong passion for fresh, seasonal and sustainable ingredients to both the hotel and Bistro Ten Zero One, one of the best restaurants in West Palm Beach. He describes his cuisine as being fresh and simple, and is excited to add regional flavors from the Northwest to the menu. 

Outside of the restaurant, Chef Mark enjoys paddle boarding, playing basketball, relaxing in Barnes & Noble -- and cheering on the New York Yankees. He is committed to being involved in the community and supports breast cancer awareness and The United Way.
