SINGAPORE--(Marketwired - Nov 2, 2015) - Colony, a new buffet restaurant located on level three of The Ritz-Carlton, Millenia Singapore, is now open.

Colony alludes to the seafarious voyage that the British took to travel to the East Indies for trade and commerce in the late eighteenth century. An essence of urban living, the elegant British-colonial charm of the buffet restaurant is characterized by an eclectic mix of vintage and custom-made furniture featuring tartan and houndstooth prints, alongside touches of modernity, while old maps, photographs and postcards adorn the walls and partitions, evoking the nostalgia of a bygone era.

Eight different conservatory kitchens, helmed by 'live' culinary showmanship, detail a food narrative of the culinary journey and heritage that transformed Singapore, which gave its cuisine a sense of identity. Incorporating various cooking techniques, each 'live' kitchen showcases the best of Chinese, Indian, Indonesian, Malaysian, Western and local dishes, bringing diners on a culinary journey through Singapore's heritage cuisines.

1. The Ice Bar - A variety of crustaceans on ice, salads, cold cuts and cheeses
Highlights: King crab legs, half shell scallops, black mussels and poached 'live' prawns

2. The Grill & Rotisserie - A selection of Western and Asian meats grilled to perfection
Highlights: Beef wellington, sop buntut (Indonesian oxtail soup), Iberico suckling pig with Balinese spices, beer battered cod fillet, beef and stout stew, and grilled satay

3. The Steam Basket - Asian noodles, soups and other steamed delights
Highlights: Colony laksa with homemade lobster ball, hand-pulled noodles with supreme chicken broth and an assortment of dim sum such as scallop dumplings and xiao long bao 

4. The Wok - Local wok-fried delicacies
Highlights: Singapore chilli crab and seafood fried rice with XO sauce

5. The Tandoor - Indian meats, seafood and breads cooked in a traditional Tandoor oven
Highlights: Roti prata, idly, prawn kali mirchi, lasooni lamb steak, and assorted naans

6. The Fruit Stall - An assortment of whole fruits and fresh pressed fruit juices
Highlight: The "Juice of the Day"

7. The Patisserie* - A decadent selection of sweet treats
Highlights: Assorted Nonya kueh, bread and butter pudding, artisan tea chocolates and ice cream flavors such as earl grey and gula melaka

8. The Bakery* - Freshly baked breads, pastries and sandwiches
Highlights: The Upper Crust -- a new pastry creation comprised of a cookie crust and muffin base. It is available in four different flavors such as coconut raisin cookie crust with pandan coconut kaya muffin, and sesame cookie crust with orange cream cheese muffin.

*Select items such as cakes, artisan chocolates and pastries are available for take away at both The Patisserie and The Bakery, from 11.00 a.m. to 10.00 p.m. daily.

In the afternoons, entertain family and friends at The Ritz-Carlton, Millenia Singapore over a traditional British-style three-tier afternoon tea set in Colony, a treat that English high society similarly enjoyed back in the early 19th century. At Colony, the afternoon tea experience is elevated with the addition of a flute of Moët & Chandon Brut Imperial Champagne served from a magnum.
